I am okay with Sam's favorite singer being Celine Dion, because this is my head canon:
The Winchesters don't get downtime for music. Sam doesn't get time to go to record stores and explore new singers, and when he sits around at the bunker he's researching -- he's got his laptop, but we don't see him with headphones. We've seen his bedroom - it's spartan. And we know who picks the music in the car. The most "with it" we've seen of Sam and music is the year Dean was in Purgatory, when he had the iPod. So the last time Sam probably had to listen to music was... back when he was in school. Maybe not even in college, because he was working hard with a scholarship to uphold. So probably before that, when he was around other kids who talked about and shared music all the time.. middle and high school.
IMHO it's really no surprise that Sam's favorite vocalist is the singer who was super-popular when he was a teenager, the one who would have let him "fit in" and feel normal, and who he might have clung to even harder because of the disdain Dean would have had for even then.
