We've seen variants of monsters in the past, not including the alphas. For instance, the werewolf Madison didn't remember what she did when transformed, later ones did, and some werewolves can survive on animal hearts. I always ascribed it to an evolution of sorts. Ever since season six, however, I file the really bizarre traits under "Eve's Experiments".
Also, why steal leather when they could skin the guy and make their own? I think the leather thief was taking it as a trophy. Which would make him a kinky serial-killer vampire.
